Ingredients
  

  • 5 eggs
  • 1 tbsp soy sauce
  • 1-2 tbsp water
  • 1 tsp sesame oil
  • Finely chopped spring onion for garnish
  • Fried shallots for garnish
  • Chilli oil for drizzling optional

Instructions
 

  • In a shallow heatproof dish, mix together the soy sauce, water, and sesame oil.
  • Carefully add the eggs into the dish, keeping the yolks intact (do not beat).
  • Bring water in a steamer to a boil. Place the dish in the steamer, then reduce to medium-low heat and steam for 6–8 minutes:
  • Approximately 6 minutes for soft, runny yolks; 8 minutes for fully set yolks.
    If steaming for 6 minutes, turn off the heat and let the eggs sit covered for an additional 2–3 minutes.
    Steaming times may vary depending on your steamer, the size of the eggs, and the dish used. For a softer yolk, start checking from 4–5 minutes and adjust the cooking time to your preference.
  • Remove from the steamer. Garnish with spring onion and fried shallots, and drizzle with chilli oil if desired.
