Taiwanese Sweet and Tangy Pickled Cucumber is a classic side dish, and one of the easiest things you can pickle at home. It only needs a handful of ingredients, and the method comes down to two simple steps: salting the cucumber to draw out moisture, then squeezing it dry. That’s what keeps the crunch. And if you like a bit of heat, add a little chilli to the pickle itself, or drizzle over some chilli oil just before serving.

Why You’ll Love This Recipe

  • Ready in a day: salt, rinse, season, and let it sit in the fridge overnight.
  • Cheap and simple: just cucumber, garlic, vinegar, sugar, and sesame oil.
  • Genuinely crunchy: salting and squeezing out the moisture is what keeps the texture crisp rather than soggy.
  • Easy to adjust: add chilli for heat, or tweak the vinegar-to-sugar ratio to taste.

Tips for Making This Recipe

  • Don’t Skip the Salting Step: salting draws moisture out of the cucumber, which is what keeps it crunchy rather than watery once pickled.
  • Squeeze It Properly Dry: after rinsing, squeeze the cucumber firmly by hand. Any leftover water will dilute the dressing and soften the texture.
  • Adjust the Vinegar and Sugar: the ratio can be shifted to 2:1 or 1:1 depending on whether you prefer it more tangy or more sweet.

How to Store This Pickled Cucumber

This is a quick, unfermented pickle made with raw garlic and sesame oil, so it’s best kept refrigerated and eaten within about 3 days. Always use a clean, dry utensil each time you serve some, since anything wet or previously used can introduce bacteria and shorten how long it keeps.

Final Thoughts

Taiwanese Sweet and Tangy Pickled Cucumber is proof that a good side dish doesn’t need much. A bit of salting, a quick dressing, and one day in the fridge gets you a pickle that’s crisp, sharp, and endlessly useful alongside rice, noodles, or heavier dishes.

Ingredients

  • 1 whole cucumber about 380g
  • 8 g salt 2% of the cucumber weight
  • 2 tsp sugar
  • 1 tbsp finely chopped garlic
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • A small pinch of salt
  • 1 tbsp sesame oil

Instructions

  • Prepare the cucumber: Trim the ends off the cucumber and cut into slices.
  • Salt the cucumber: Toss the cucumber with the salt and sugar and leave to sit for 15 minutes to draw out the moisture.
  • Rinse: Drain off the liquid, then rinse the cucumber 2 to 3 times, using clean, drinkable water for the final rinse.
  • Squeeze dry: Squeeze the cucumber by hand to remove excess water. This step is what gives the cucumber its crunchy texture.
  • Season: Add the garlic, rice vinegar, sugar, a small pinch of salt and the sesame oil. Toss well, then refrigeratefor a day before enjoying.
  • The ratio of vinegar to sugar can be adjusted to 2:1 or 1:1, depending on how sweet or tangy you'd like it.
