Steamed eggs is definitely one of my favourite go-to meals to make at home because it’s incredibly simple and almost impossible to mess up. There are also so many ways to elevate it! This steamed eggs with spinach is one of my favourites—it’s light, comforting, and packed with vegetable nutrients. It’s a great dish to add to your regular meal rotation, especially if you’re looking for something healthy and satisfying.

Keep in mind that ingredients like spinach release water during cooking, so you may want to slightly reduce the added liquid to maintain the right consistency. Using stock instead of water will also enhance the overall flavour, but both work well depending on your preference.

  • Spinach preparation matters : Always blanch spinach before using. Spinach contains oxalic acid, and blanching helps reduce it, improving both taste and nutrient absorption.
  • How to avoid bubbles when steaming : Do not seal the lid completely—leave a small gap (you can place a chopstick under the lid) to release excess heat. Steam over medium-low heat to prevent the eggs from overcooking and forming a honeycomb texture.
  • Strain the egg mixture : This step helps achieve a smoother, more delicate texture.

Ingredients
  

  • 2 medium eggs about 100g
  • 150–180 g spinach
  • 150 ml water or stock about 1–1.5× the egg mixture
  • A pinch of salt
  • Soy sauce to taste
  • Sesame oil to taste optional
  • Chilli oil optional

Instructions
 

  • Prepare the spinach : Wash the spinach thoroughly. Blanch in boiling water for about 30 seconds, then transfer to ice cold water. Drain well, squeeze out excess water, and cut into small pieces.
  • Prepare the egg mixture : Crack the eggs into a bowl and gently beat (avoid creating too many bubbles). Add water (or stock for more flavour) and a pinch of salt, then mix well. Strain the mixture through a sieve for a smoother texture.
  • Assemble : Evenly spread the spinach in a shallow heatproof dish. Pour the strained egg mixture over the spinach. Skim off any large bubbles on the surface with a spoon.
  • Steam : Bring water in a steamer to a boil. Place thedish in the steamer, cover, and steam over medium-low heat for 12–15 minutes,or until set.
  • Finish : Drizzle with soy sauce and sesame oil, or chili oil if you prefer a bit of heat.
