Easy Steamed Eggs with Spinach

This simple steamed egg with spinach is a light,comforting dish with a silky-smooth texture, packed with vegetable nutrients, protein, and iron. It’s quick to prepare and perfect for a healthy, weight-conscious diet.

- 2 medium eggs about 100g
- 150–180 g spinach
- 150 ml water or stock about 1–1.5× the egg mixture
- A pinch of salt
- Soy sauce to taste
- Sesame oil to taste optional
- Chilli oil optional
Prepare the spinach : Wash the spinach thoroughly. Blanch in boiling water for about 30 seconds, then transfer to ice cold water. Drain well, squeeze out excess water, and cut into small pieces.
Prepare the egg mixture : Crack the eggs into a bowl and gently beat (avoid creating too many bubbles). Add water (or stock for more flavour) and a pinch of salt, then mix well. Strain the mixture through a sieve for a smoother texture.
Assemble : Evenly spread the spinach in a shallow heatproof dish. Pour the strained egg mixture over the spinach. Skim off any large bubbles on the surface with a spoon.
Steam : Bring water in a steamer to a boil. Place thedish in the steamer, cover, and steam over medium-low heat for 12–15 minutes,or until set.
Finish : Drizzle with soy sauce and sesame oil, or chili oil if you prefer a bit of heat.
