Ingredients
- 2 medium eggs about 100g
- 150–180 g spinach
- 150 ml water or stock about 1–1.5× the egg mixture
- A pinch of salt
- Soy sauce to taste
- Sesame oil to taste optional
- Chilli oil optional
Instructions
- Prepare the spinach : Wash the spinach thoroughly. Blanch in boiling water for about 30 seconds, then transfer to ice cold water. Drain well, squeeze out excess water, and cut into small pieces.
- Prepare the egg mixture : Crack the eggs into a bowl and gently beat (avoid creating too many bubbles). Add water (or stock for more flavour) and a pinch of salt, then mix well. Strain the mixture through a sieve for a smoother texture.
- Assemble : Evenly spread the spinach in a shallow heatproof dish. Pour the strained egg mixture over the spinach. Skim off any large bubbles on the surface with a spoon.
