15-Minute Udon Noodles in Gochugaru Soup
Ingredients
- 1 pack of udon noodles (or any Asian noodles of your choice)
- Spring onion and sesame seeds for garnish
- 1 egg yolk (optional)
SOUP BASE BLEND
- 1 tbsp gochugaru (Korean chilli powder)
- 1 tbsp finely chopped garlic
- 1 tbsp finely sliced spring onion
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp dashipowder (or MSG)
- 2-3 tbsp oil for sizzling
Instructions
- In a large heatproof bowl, combine gochugaru, garlic, and spring onion. Heat 2-3 tbsp oil until shimmering, then pour over the mixture.
- Add soy sauce, sugar, and dashi powder to the mixture and stir well.
- Cook the udon noodles in boiling water as per instructions.
- Add some noodles cooking water to the gochugaru mixture and mix well.
- Transfer cooked noodles to the bowl, top with an egg yolk (optional), spring onions, and sesame seeds. Enjoy!
