Ingredients
  

  • 1 pack of udon noodles (or any Asian noodles of your choice)
  • Spring onion and sesame seeds for garnish
  • 1 egg yolk (optional)

SOUP BASE BLEND

  • 1 tbsp gochugaru (Korean chilli powder)
  • 1 tbsp finely chopped garlic
  • 1 tbsp finely sliced spring onion
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp dashipowder (or MSG)
  • 2-3 tbsp oil for sizzling

Instructions
 

  • In a large heatproof bowl, combine gochugaru, garlic, and spring onion. Heat 2-3 tbsp oil until shimmering, then pour over the mixture.
  • Add soy sauce, sugar, and dashi powder to the mixture and stir well.
  • Cook the udon noodles in boiling water as per instructions.
  • Add some noodles cooking water to the gochugaru mixture and mix well.
  • Transfer cooked noodles to the bowl, top with an egg yolk (optional), spring onions, and sesame seeds. Enjoy!
