Noodles + Ramen Hack + Recipe

Have you heard of the Netflix cooking show Culinary Class Wars? I’ve been totally hooked on it and couldn’t help but binge-watch every episode! It’s inspiring, intense, and brings some incredible ideas straight from those chefs featured on the show.

Culinary Class Wars is one of the most ambitious cooking competitions I’ve seen. This unique show divides 100 chefs into two groups: “White Spoons,” featuring 20 experienced, professional chefs, and “Black Spoons,” made up of 80 emerging talents who go by aliases. With its jaw-dropping production quality, impressive casting, and fresh concept, it’s a must-watch if you’re into cooking shows.

The show is judged by two culinary legends: restaurateur Paik Jong-won and Korea’s only three-star Michelin chef, Ahn Sung-jae. It’s actually Chef Ahn Sung-jae’s first major appearance on a show like this, and he’s quickly gained a huge following for his expertise and distinctive style.

Chef Ahn recently appeared on Paik Jong-won’s YouTube channel, where he shared his ramen hack: Roasted Garlic Ramen. His trick is to roast garlic before adding it to the ramen broth, giving it a subtle depth of flavour.

You can click here to watch the full video.

After trying it myself, I can honestly say that the roasted garlic transforms the broth, making it taste divine. If you’re looking to add a new twist to your ramen, this roasted garlic hack is definitely worth a try!

Servings 1

Ingredients

  • 1 pack Shin Ramen or any spicy Korean ramen
  • 2 whole garlic bulbs
  • Water for cooking
  • 1 fried egg for topping optional
  • Chopped spring onion
  • Sesame seeds optional

Instructions

  • Cut the tops off the garlic bulbs and air fry at 200°C fry for 20 minutes until the garlic is soft and slightly charred. (You can also brush with a little oil, and wrap them in foil to prevent the tops from over-charring.)
  • Add roasted garlic to a pot of water (the amount recommended on the ramen package). Bring to a boil, letting the garlic infuse the water until the broth turns a bit cloudy.
  • Remove the garlic bulbs, then carefully squeeze or mash the garlic cloves out of their skins and return the softened garlic to the pot.
  • Add the ramen seasoning sachets and noodles to the pot. Simmer until the noodles reach your preferred texture (or according to the package instructions).
  • Garnish with chopped spring onions and sesame seeds, and top with a fried egg if desired. Enjoy!
