Gochugaru is a Korean chilli powder made from sun-dried red chilli peppers. Known for its vibrant red colour, smoky-sweet aroma, and mild to medium heat, it adds depth and warmth without being overpowering. Unlike many chilli flakes, gochugaru provides a balanced heat that enhances flavour rather than simply making a dish spicy. It’s commonly used in kimchi, tteokbokki, and Korean stews, and has become one of my favourite ingredients for creating quick, flavourful meals.

- Pour the Oil While It’s Hot : The hot oil is what brings the aromatics to life. If the oil isn’t hot enough, you won’t get the same depth of flavour.
- Adjust the Spice Level : Love spicy food? Add extra gochugaru and garlic. Prefer something milder? Simply reduce the amount of gochugaru or add a little more sugar to balance the heat.
- Don’t Skip the Hot Water : The hot water helps blend the seasonings together and creates a light sauce that coats the dumplings evenly.

15-Minute Soup Dumplings in Gochugaru Chilli Sauce
Ingredients
- 7 frozen soup dumplings or any dumplings you like
- Spring onion and sesame seeds, for garnish
FOR THE SAUCE *Adjust to taste
- 1 tbsp finely chopped garlic
- 1 tbsp finely chopped spring onion
- 1 tbsp gochugaru Korean chilli powder
- 1 tbsp soy sauce
- 1 tsp sugar
- 1 tsp vegetarian dashi powder or MSG
- 2–3 tbsp oil for sizzling
- 4-5 tbsp hot water about 75ml
Instructions
- In a large heatproof bowl, combine the garlic, spring onion,and gochugaru.
- Heat the oil over medium-high heat until shimmering, then carefully pour it over the aromatics. Stir to combine.
- Add the soy sauce, sugar, and dashi powder. Pour in the hot water and mix until well combined. Taste and adjust the water and seasoning if desired.
- Steam or microwave the frozen soup dumplings according to the package instructions until cooked through.
- Arrange the cooked soup dumplings on top of the prepared chilli oil sauce.
- Garnish with spring onion and sesame seeds before serving.
