What is Gochugaru?
Gochugaru is a Korean chili powder made from sun-dried red chili peppers. With its vibrant red colour, smoky-sweet aroma, and mild to medium heat, it adds depth and warmth without being overpowering. Unlike regular chili flakes, it enhances dishes with a balanced spice, making it perfect for this soup base. You’ll often find it in kimchi, tteokbokki, and Korean stews (jjigae). I love its subtle heat and use it frequently in my cooking!
