- 1/2 tsp salt
- 1 tsp garlic granules
- 1.5 tsp gochugaru Korean chilli powder
- 1 tsp sugar
- 2 tbsp Kewpie mayo
FOR THE SAUCE TO BRUSH
- 30 g unsalted butter
- 1/2 tsp black pepper
- 1 tsp golden syrup
- 1 tsp lemon juice
- 1 tbsp chopped chives
Instructions
- Prepare the Chicken: Slice the chicken thighs into bite-sized pieces.
- Marinate the Chicken: In a bowl, combine chicken pieces with salt, garlic powder, gochugaru, sugar, and Kewpie mayo. Mix well and let it rest for 30 minutes (or overnight for best flavour). Add extra gochugaru or chilli flakes if you prefer it spicier.
- Soak the Skewers: Soak bamboo skewers in cold water for a few minutes — this helps prevent them from burning during cooking.

- Air Fry the Chicken: Place the skewers in the air fryer at 200°C for 15 minutes. Lightly brush or spray with vegetable oil if desired — this can help enhance browning. Flip the skewers halfway through to ensure even cooking on both sides.
- Make the Butter Sauce: While the chicken is cooking, combine butter, black pepper, golden syrup, lemon juice, and chives in a small bowl. Mix well until smooth.
- Brush and Serve: Once the chicken is done, brush the hot skewers with the butter chive sauce. Serve and enjoy!
