These easy chicken skewers are marinated in a savoury, mildly spicy blend with a creamy mayo base and gochugaru for a gentle kick. Cooked in the air fryer until juicy and golden, they’re finished with a rich chive butter glaze that melts into the meat. High in protein, quick to prepare, and full of flavour — perfect for weeknight dinners or casual gatherings.
Prepare the Chicken: Slice the chicken thighs into bite-sized pieces.
Marinate the Chicken: In a bowl, combine chicken pieces with salt,garlic powder, gochugaru, sugar, and Kewpie mayo. Mix well and let it rest for 30 minutes (or overnight for best flavour). Add extra gochugaru or chilli flakes if you prefer it spicier.
Soak the Skewers: Soak bamboo skewers in cold water for a few minutes — this helps prevent them from burning during cooking.
Skewer the Chicken: Thread the marinated chicken onto skewers.Don’t overload or pack too tightly — this ensures the chicken cooks evenly,especially in the center.
Air Fry the Chicken: Place the skewers in the air fryer at 200°C for 15 minutes. Lightly brush or spray with vegetable oil if desired — this can help enhance browning. Flip the skewers halfway through to ensure even cooking on both sides.
Make the Butter Sauce: While the chicken is cooking, combine butter,black pepper, golden syrup, lemon juice, and chives in a small bowl. Mix well until smooth.
Brush and Serve: Once the chicken is done, brush the hot skewers with the butter chive sauce. Serve and enjoy!
