Quick & Easy Garlicky Vermicelli (Rice Noodles)
Ingredients
- 2 packs dried rice noodles about 95g total
- Vegetable oil for cooking
- 2 tbsp finely chopped garlic
- 1 tbsp finely chopped spring onion
- 1 tsp finely chopped chilli optional; remove seeds for less heat
- A large handful of coriander to garnish or spring onion if preferred
FOR THE SAUCE *adjust to taste
- 1 & 1/4 tbsp soy sauce
- 1 tbsp oyster sauce or mushroom oyster sauce for a vegetarian option
- 1 tsp sugar
- A pinch of white pepper
- ½ tsp sesame oil
- 90 ml water
Instructions
- Soak the noodles : Soak the rice noodles in warm water for 5–7 minutes, until just softened (about 70–80% soft). Drain well and set aside.
- Prepare the sauce : In a small bowl, mix together all the sauce ingredients until well combined.
